Ingredients

3 ripe bananas

1/2 cup brown sugar

1/4 cup white sugar

1 tablespoon of sour cream

2 eggs, beaten

1/2 cup melted butter

1 teaspoon vanilla extract

1 1/2 cups flour

1 teaspoon baking soda

Pinch of salt

Honey or butter, to top bread

(Nuts optional)

Instructions

Preheat the oven to 350 degrees.

In a large bowl, use a fork to mash bananas until mostly lump free.

Mix in sugars, sour cream, eggs, melted butter and vanilla. Stir until fully combined.

Sift together flour, baking soda and salt, then add to the banana mixture and stir gently until well combined.

If you are adding nuts, fold into the batter gently.

Pour the bread batter into a prepared loaf pan and bake for 45–55 minutes or until a toothpick inserted into the middle of the bread comes out clean.

Let cool slightly and serve alongside your favorite beverage.
